Spare Ribs with Black Beans



A favorite Dim-Sum dish with us. Now I've learnt how to do it myself. Though still, mine isn't quite as tender as our usual Dim Sum joint. The other day, I chanced upon the boss of the restaurant and asked him to share with me his secret. Boss, how u made ur spare ribs so tender, ah? Put tenderiser??? Well, surprise, surprise he said noooo... apparently they run tap water continuously over the spare ribs for some hours. I'll be sure to try that next time and see if it works.
